Roast Parsnips, like other root vegetables are rich in vitamins and minerals. Most of the vitamins and minerals are found close to the skin, so before cooking, scrub your parsnips instead of peeling! Parsnips are particularly rich in potassium. (Potassium is very important for healthy muscles and nerves within the body!)
Parsnips are an autumn vegetable, rarely eaten raw but widely used in Stews, Casseroles, Sunday Roast Dinners and Traditional Christmas lunches!
