Red cabbage has a peppery, robust hearty flavour. It is often used raw for salads and coleslaw and is delicious pickled and braised.
Red cabbage has many nutritional benefits, in addition to being packed with vitamin C and anthocyanins, red cabbage is packed with fibre, vitamin K, vitamin B6, potassium and manganese, and also contains thiamine, riboflavin, folate, calcium, iron, and magnesium.
