This morning I was at the Norwich Farmers Market in Costessey and got talking to a customer about Butternut Squash. I mentioned that I had used a really great recipe for Butternut Squash soup and that I would post it on here. So here it is!
Last autumn we had a mass of Butternut Squash that we couldn’t sell because of the skin quality. Rather than throwing them onto the compost heap we found this great Butternut Squash Soup recipe. For the first batch we didn’t have any smoked paprika and the soup was good, but for the second batch we did have the smoked paprika and transformed the soup from good to great!
